This study, carried out over three years within the framework of the MicMac project, has made it possible to characterize the quality of fresh apricots and to measure consumer satisfaction of a representative sample of commercial batches of fruit. In this way, the main criteria which determine consumer preferences were highlighted. Sugars, aroma and a juicy texture are the key to satisfaction for more than 90% of consumers. The analysis of consumer profiles also made it possible to identify two sub-groups that do not have the same expectations or the same demands concerning quality, particularly in terms of ripeness. This work also showed a significant gap between appreciating the appearance of the product leading to the purchase and appreciating it after having eaten it.
