This research project presents a multi-sectoral analysis of the very unique field of truffle farming. As well as examining the ecological characteristics of the truffles themselves, it highlights a number of territorial issues in limestone-rich production areas. In addition to looking at the expectations and questions of the growers, we carried out a multi-criteria analysis that linked together environmental issues, the natural environment, and examples of favourable practices. Truffle producers are asking questions that point to a need for scientific and technical knowledge as well as experimentation in the complementary areas of truffle cultivation and truffle silviculture.

Une analyse multisectorielle du champ très spécifique de la trufficulture a été menée. Tout en examinant lescaractéristiques écologiques des truffes, elle met en évidence un nombre important d’enjeux territoriaux dans les causses. Tout en explicitant les questionnements des trufficulteurs, elle présente une analyse qui relie les enjeux environnementaux, les milieux naturels et des exemples de pratiques truffières favorables. Les trufficulteurs expriment un besoin d’expérimentations et de connaissances scientifiques et techniques dans deux domaines complémentaires de la trufficulture, la voie agricole de la trufficulture et la voie forestière.
